After harvesting, the cherries are sterilized using ozonated water and ultraviolet lights. After sterilization, the cherries are anaerobically fermented with a custom yeast culture for 52 hours then thermal shock washed. The cherries are then pulped and anaerobically fermented a second time along with the pulped mucilage for 48 hours. They then undergo a second thermal shock wash. To our genuine  surprise, the coffee was not overly funky at all and came out so cleanly tropical and fruit forward that we knew we wanted to share with everyone. After experiencing struggles with the local market in 2017, the Bayter family set out to find new and innovative ways to add value to their coffees. In 2018, El Vergel was modernized and their processing expanded beyond just washed coffee. Little by little, they became pioneers of innovation in Colombia. A 30 day stabilization period is then started so the beans can develop a balanced profile. At that time, the regional government was offering small plots of land in Amaybamba to promote coffee development. She signed up and received a 1.5-hectare plot with the help of the government. She began by producing 6 quintals of Catimor coffee per year. In 2021, she planted her first Geisha plants. In 2024, her first Geisha harvest came in and to her surprise, the quality was extraordinary. Originally an employee at Bella Vista Wet Mill, Luis Pedro Zalaya has over 20 years of coffee producing experience that he now uses to manage multiple teams that oversee hundreds of farms in Guatemala. This particular lot is named Bella Carmona, an homage to the Zalaya family’s Hacienda Carmona. Cherry is delivered daily at Bella Vista from all over the valley. Processing is separated into numerous channels that represent Bella Carmona farms, Hunapú farms, and microlots such as single estates, single smallholders, or growers from elsewhere in Guatemala that Bella Vista represents. Once inspected and weighed, cherry is depulped and fermented overnight in one of the mill’s many tanks, washed clean the next day, and patio-dried.   Each individual batch of cherry is tracked electronically using a software created by Bella Vista, and drying or finished parchment is tagged with a QR code that allows the team to scan and review the exact blend in each batch, by contributing farm or farmer, variety, and location.
