Founded in 2016 by José Luis Chevas, the farm partners with a world-class barista to craft complex Geisha microlots. The first cherry is washed, then undergoes a slow dehydration in the Estate’s cold room followed by a carefully controlled drying in their dark room. The second cherry is a traditional washed process gesha.
