What is specialty coffee?

Specialty coffee is the top tier of the coffee world — beans grown, processed, and roasted with the kind of care that turns coffee into something worth talking about. Specialty beans come from a specific farm, in a specific region, picked ripe by hand. The roaster works to bring out the bean's natural character rather than burn it into uniformity. The result tastes more like an interesting beverage than a generic morning fuel.

If most coffee you've had tastes bitter or "toasted" — whether from a can, a chain, or even a third-wave café — true specialty coffee will surprise you. Done well, a coffee can taste like jasmine, ripe peach, blackcurrant, dark chocolate, honeysuckle, hibiscus tea, lime zest, watermelon candy, or even brown sugar and tobacco — whatever the bean itself wants to say.

How Golden Fleece works

We don't roast coffee ourselves. Golden Fleece is a curated marketplace of passionate small specialty roasters across the country — folks you'd otherwise only hear about by word of mouth. We vet the roasters, list their best work, and let you shop the whole collection in one place.

When you place an order, your coffee ships directly from the roaster, freshly roasted to order. If your cart includes coffees from more than one roaster, you'll get more than one box — one from each — every bag freshly roasted just for you. (More on shipping in the FAQ.)

How to read a coffee label

Most coffees on Golden Fleece are named after the farmer, region, varietal, and processing method — for example, "Ilde Burbano El Pilon — Anaerobic Washed Pink Bourbon — Colombia." That looks like a lot, but each piece is just one fact about the coffee. On the product page, the same information shows up in a cleaner grid below the description. Here's what each label tells you:

  • Roast Level

    How dark the beans were roasted. Most of our catalog is Specialty Light/Ultralight, with a few Specialty Medium and Specialty Dark exceptions.

  • Country of Origin

    Where the coffee was grown. Each origin has rough flavor tendencies that lighter roasts amplify: Ethiopia often leans floral and bright-fruited (jasmine, peach, blueberry); Kenya is famous for sparkling blackcurrant-and-tomato acidity; Central American washed coffees lean clean and sweet with cocoa and citrus notes; Colombia varies widely by region but lightly roasted often shows stone fruit, red fruit, or milk chocolate.

  • Coffee Type

    Single Origin (one farm or region) vs Blend (multiple combined).

  • Processing

    How the cherry was prepared after picking: Washed (clean, transparent), Natural (fruity, heavier-bodied), Honey (in-between), Anaerobic (experimental, often intense), or occasionally Co-Fermented (flavor inputs added during fermentation).

  • Varietal

    The specific genetic cultivar — Bourbon, Gesha, Caturra, Pink Bourbon, and many more. Like a grape variety in wine.

  • Tasting Notes

    What the roaster (or our team) noticed when cupping this specific coffee. Unlike supermarket "hazelnut" or "vanilla" flavored coffees, nothing has been added to the beans — these notes describe what the beans themselves taste like, no additives or syrups involved.

  • Flavor Profile

    A higher-level grouping of the tasting notes (Fruity, Floral, Sweet, Chocolate/Nutty, etc.). Used by our Shop by Flavor filter on the homepage.

  • Caffeine

    Caffeinated by default. Decaf coffees are clearly labeled as such, and the roaster's description usually mentions which decaffeination process was used (Swiss Water, Sugarcane EA, etc.).

  • Roast date

    When this specific batch was roasted. Most coffees taste best 5–20 days after this date.

  • Pick by flavor: use the Shop by Flavor tiles on the homepage, or filter all coffees by Flavor Profile (Fruity, Chocolatey, Sweet, etc.).
  • Pick by roast level: to taste what specialty roasting can do at its most distinctive, browse all coffees and filter by Roast Level → Specialty Light or Specialty Ultralight. These bring out each bean's natural character most clearly.
