COFFEE STORY: Three quarters of Antonio’s land in Chimaltenango is a nationally protected forest and he takes great pains to preserve it as well as the land on which he grows coffee. The same labors and forethought that maintain the land show up in coffee quality as well. Conscientious cultivation of these Bourbon and Caturra varieties yield an exquisitely clear cup with white sugar sweetness, golden raisin, and plum.
