This is one of my personal favorites from Ethiopia this year. On the cupping table and with filter brews, the elegance and articulation of silky fruit is clean and clear. This coffee sings soprano notes of articulated citrus and berries. There's a range of fruit and florality that is so pleasantly captivating. The aromatics and cup quality are inviting with notes of moon grape, strawberry, citrus, passionfruit... the list goes on. The cup has a rounded tea-like attribute that fills the pallet. Waves of candied fruit and florals linger long after each sip. Truly an enjoyable and interesting profile from hot to cool.

There are approximately 1,000 farmers that deliver cherry to the Chelbessa washing station, the folks come from the region and have very small farms sitting at an elevation around 2,000 merters (6,500 ft.+). This lot consists of the Ethiopian Heirloom varieties Korume and Wolisho and others we simply have not been able to track, all of which inherently an Ethiopian Landrace.

Once the cherries arrive at the Chelbesa Washing Station, they are placed in water for sorting and removing of floaters. The cherries are then de-pulped and left to dry ferment in tanks for 2-3 days, to be later washed and placed to dry on raised beds. To ensure an even drying, the parchment is constantly moved each day, taking 7-10 days, depending on the weather, until reaching the desired humidity. The result makes for a clean and bright cup.

Orders made Monday-Sunday are roasted the following Monday. Shipped on Tuesdays. Our coffees are best after two weeks++ of the roast date.
