This is El Renacer, "the rebirth", from Peruvian producer Javier Salas. This gesha is a fabulous mix of mango and berries, along with a spiced flavor reminiscent of nutmeg.
Javier Salas is a new-to-us producer who focuses on high quality standards and attentive farm management. The proof of his hard work is evident in this coffee. After selecting harvesting of only ripe cherries, the coffee underwent anaerobic fermentation for 48 hours. Then it was depulped and fermented anaerobically once more for 72 additional hours. Then the coffee was washed, drained, and dried on raised African beds with light-blocking canopy for 20 days.
