Erick Bravo has delivered some of our favorite coffees each year out of Colombia. This years out turn is excellent. His Pink Bourbon has a big body, tropical stone fruit and viscous sweetness. The acidity in this lot is delicate and firm, balancing out the weighty cane sugar profile. A lively and well rounded Pink Bourbon. If you're curious about what the variety is like, this is a great example. This coffee is recommended for all brewing types.
Erick is a hard working and diligent farmer. He's been placing high in competitions such as Colombia's Cup of Excellence & Huila Mágico. His farms consist of thousands of trees varying with Castillo, Catimore & Pink Bourbon. With the cool air of the Magdalena River at the edge of his farm, the magical conditions of the area couldn't be better suited for cultivating evenly maturated cherries.
This lot is 100% Pink Bourbon, the variety that Erick is most focused on when it comes to their highest quality coffees. Fermented 48 hours in cherry, followed by another 36-hour dry-ferment after de-pulping. Upon washing the coffees, they are laid out to dry in a greenhouse for approximately 15-20 days, depending on the weather.
