Hugo Gualaco is a second-generation coffee producer based in San Adolfo, Huila. Today, his children are actively involved in the farm, continuing the family tradition into its third generation.
The farm spans 3 hectares dedicated to coffee cultivation. Due to its small size, most tasks are carried out manually, allowing for meticulous care and attention at every stage of production.
Hugo follows traditional processing methods, fermenting the coffee in on-site tanks before drying it on raised beds. For this particular lot, the coffee undergoes a 48-hour fermentation in a sealed environment, enhancing its complexity and character.
The resulting cup profile is a true reflection of Hugo’s unique approach to farming and processing—distinctive, expressive, and deeply connected to his land.
