Nogales is a family-run coffee farm built on strong community values and a deep tradition of excellence. Since winning the Cup of Excellence in 2005, the farm has continued to innovate. Today, Los Nogales focuses on controlled fermentation and improved soil management to produce some of the best-tasting coffees in the industry.
Why this coffee name Chocoberry, it because the favor is rich of chocolate and red fruit noted. It was first released in 2024 with the profile presenting raspberry and strawberry aromas, a creamy milk chocolate texture, and a long finish.
This coffee was carefully picked at full ripeness to ensure the highest quality cherries. The cherries were then washed with treated water to remove dirt and surface impurities, preparing them for the next stage.
Next, the coffee was briefly fermented in 90°C water for 60 seconds to pasteurize it and release additional sugars for fermentation. After this, the cherries were depulped, and the juice extracted during depulping was used again in fermentation. This technique enhances the natural sugars in the coffee.
The coffee then underwent a 7 days fermentation using its own sugars from the cherry skins, combined with a ratio of one part pre-fermented coffee yeast to four parts of the extracted juice. These pre-fermented yeasts, microorganisms recovered from previous coffee must, clarified and preserved using beans of the same variety, promote a high-quality fermentation while maintaining the coffee's unique terroir.
Finally, the coffee was dried under the sun for 15 days and deliver to our roastery at Newbery Street Coffee Roasters.
