We are super excited to share this just-landed Ecuadorian gem from famed Cup of Excellence winning farm Lugmapata. Producer Enrique Merino and his family have a long track record of producing fabulous coffees, and this limited lot is truly beautiful. Our first coffee from Lugmapata was their #6 COE winner from the 2023 harvest, and we're proud to to continue featuring their efforts. We cupped this coffee again this morning, and in addition to the resonant flavors of cherry, caramel, and orange, we also tasted apricot, green grape, and an uncommon depth and complexity.
The cherries were selectively hand harvest, then manually sorted again before processing. After depulping, the coffee underwent submerged, cold fermentation around 19-20 °C, which slows the process and increases flavor complexity. After 72 hour of fermentation, the coffee dried covered by a marquesina.
