COFFEE STORY: This community lot is made up of coffee from three producers... two from Aponte and one from nearby Buesaco. Aponte and other surrounding areas have become famous for their outstanding honey-processed coffees. All the coffees in this lot were processed in a similar way, with some sealed in-cherry fermentation before de-pulping, and some open fermentation before going to the drying beds. Leaving some of the fruit mucilage on the coffee when drying is what makes it a honey process and this imparts deep sweetness. The extra in-cherry fermentation used for this lot really amps up the juiciness and vibrance of the coffee. Expect a tremendously silky and juicy mouthfeel with gentle, but notable, acidity. This coffee goes down smooth and leaves you wanting a second cup.
