Next up in the fresh Ecuador season is this lovely typica mejorado from Finca Meridiano. This farm is new to us this year, and this crop is sure to have us going back for years to come. We love this coffee's mango & grapefruit combo, rounded out by a complex spice that reminds us of nutmeg. This is a tropical, layered coffee that showcases the variety well.
Finca Meridiano sits at the base of the Western Andes. Owner Mario Hervas has been producing specialty coffee there for more than 15 years and has placed in numerous competitions, including Cup of Excellence.
After hand-picking, the cherries were rinsed in fresh water and floated to remove defects. Then they fermented in cherry for 24 hours, followed by pulping and anaerobic fermentation for 48 hours. Next the cherries were fully washed, thoroughly drained, and moved to dry in a greenhouse.
