The 2025 Ecuador hit parade is in full swing! Every year we work with our good friend Fabricio from Hacienda La Florida in Ecuador to select from his veritable treasure trove of fresh, immaculately-processed gems. On top of our just-released Finca Meridiano, we are thrilled to release our first coffee from Fabricio. This is a process-forward coffee, but Fabricio's wizardry with fermentation ensures these coffees are super clean, tropical fruit bombs, without the funk. We love this coffee for its ripe papaya, beautiful vanilla aroma, and velvety, lingering quality.
From Fabricio:
This coffee fermented for four days in stainless steel tanks, reaching a pH of 3.9. The first drying stage took place in a custom dark room for 15 days, bringing the coffee down to 18% moisture. After that, the coffee rested for 10 days in grainpro bags, allowing for controlled enzymatic activity, enhancing fruit flavor and complexity. Then the coffee finished drying for a subsequent 45 days.
Dark room drying controls humidity and moisture, allowing for better preservation of all the flavor compounds formed during processing.
Fabricio mills coffee for many of his neighbors, including our lot from Finca Meridiano. Fabricio and his family are repeat Cup of Excellence award winners, and their coffees are some of our favorites year after year.
