IPA Caturra! Yes, IPA and coffee together.
This experimental lot is co fermented with IPA hops, resulting in a cup that feels bright, layered, and quietly complex. Floral aromatics lead into lime zest and soft lemongrass, finishing with a subtle hop character that lingers without overpowering.
Sebastián Ramírez, a fourth generation producer, brings over 13 years of experience to his work. He has focused much of his career on fermentation, using it as a way to shape and elevate flavor. His approach blends precision with creativity, and he is widely recognized for techniques such as co fermentation and carbonic maceration.
This lot follows his Black Honey process. Whole cherries are first sealed in a CO₂ rich environment and undergo 100 hours of controlled carbonic maceration. After depulping, the coffee is sealed again with a hop culture he calls Mosto for an additional 100 hours.
Drying takes place slowly on open patios for up to 30 days, followed by a 15 day stabilization period to bring clarity and structure to the final cup.
The result is elegant and aromatic, with floral notes, lemongrass brightness, and a clean, gently hoppy finish that will feel especially familiar to beer drinkers.
