Sirinya Coffee holds a very special place in our hearts. Goh, the producer behind Sirinya, is someone we deeply admire for his dedication to coffee processing and his mission to improve the lives of the surrounding mountain communities. His work focuses on carefully crafted micro lots of Arabica, and we feel incredibly honored to share his coffee.
Pack has visited Sirinya twice and has long hoped to work with Goh. Because of the farm’s limited production and high demand, securing this coffee has not been easy. This year, we were fortunate to obtain Sirinya Natural, and we are truly excited to finally share Goh’s work with all of you.
This natural processed coffee begins with the careful selection of fully ripe cherries. The cherries are washed and floated to remove defects, then fermented overnight. They are dried on African raised beds under the sun until reaching around 15 percent moisture, preserving bright acidity while building complexity. The coffee is then transferred to a controlled drying room, where it slowly reaches a final moisture content of 10 to 12 percent. This final stage enhances sweetness and body, resulting in a beautifully balanced and expressive cup with
Strawberry, Red Apple, Sweet Red Cherry.
