Tres De Mayo is our newest menu addition, and we're loving its perky green appley and cherry flavors. This coffee is a humble combo of typica and caturra, and it's a clean, no-funny-business beauty. We're also offering a limited espresso roast as well!
Candelaria Sarango Santos produces coffee on her farm called Tres De Mayo, in the San Ignacio region of Cajamarca, Peru. She and her family have a long history in agriculture, and she learned to tend coffee from her parents. We're very pleased with the quality of her crop, and we hope to work with her coffees again soon!
After selective hand-harvesting, the ripe cherries were immediately pulped and briefly fermented in open containers. Then the coffee was fully washed and subsequently dried on raised African beds for 15 - 20 days.
