Only ripe cherries are harvested and floated for a second selection and left in open tanks for 24 hours, the cherries are depulped and fermented again for 60 hours in open tanks and later washed, dry in sun-bed driers for 2 to 3 weeks and sometimes, depending on the weather, finish drying in mechanical dryers.
Our first Coffee we ever contracted was Yessica and Diego Parra’s Pink Bourbon from unblended. It was very popular with lots of our delicate coffee buds and we are hyped to continue this producer relationship with a different harvest! I was lucky enough to meet the Diwan crew (Yessica and Diego) at WOC in San Diego and they are some of the nicest people you can meet on this earth. I hope to be able to work with these two young and glowing producers a few times a year.
This Papayo is such a fun and punchy coffee. The acidity is sparkling and has a nice level of sweetness in the finish. This coffee leans right into red, green, orange, and yellow tropical fruits. This coffee is easy to brew and reminds me of strawberry-kiwi juice, mango candy, guava paste, and christmas time ponche depending on the brew method. It’s a coffee I look forward to drinking! Over days of tasting we have experienced notes of strawberry-kiwi, mango, ponche, guava paste, canela, mandarin cups, and honey.
