ABOUT THIS COFFEE AND PRODUCER
The Sacapo farm is owned by Bernard Uhe of ChocoVilcaMundo (CVM). CVM is an Ecuadorian agricultural company owned by Bernard Uhe and his coffee growing family in Colombia. CVM’s coffee growing operation includes Finca La Noria, Finca El Dorado, and Finca Eliza. Finca Sacapo is their newest and smallest farm. CVM has been at the forefront of Ecuadorian coffee production, obtaining Cup of Excellence placements in multiple years as well as placements in the Ecuadorian Golden Cup.
The Wush Wush lot we received from Finca Sacapo is produced using a classic natural process. After harvesting, the cherries are placed on raised beds and turned a minimum of 3 times a day. They are dried to 10.5-11% moisture. Then they are placed in grainpro bags before being milled down to the coffee bean.
WHY WE SELECTED THIS COFFEE
This is our first time working with Finca Sacapo, and it introduces a new and exciting farm in Ecuador from Bernard Uhe, known for projects like Finca La Noria.
This lot is one of the more distinctive wush wush coffees we’ve tasted, with a natural process that feels especially well handled. The cup opens with a crisp tropical note, pineapple leading in a way that almost feels sparkling.
From there, the acidity deepens into a more velvety sweetness, with a clear black cherry note adding weight and contrast. As it lingers on the palate, a jasmine tea character begins to show, bringing a floral quality that adds another layer to the experience.
It’s a nuanced and expressive profile that feels very different from most wush wush naturals we’ve come across, with each element unfolding in its own time. A really enjoyable coffee to spend time with.
