ABOUT THIS COFFEE AND PRODUCER
Chevas Coffee Estate is a family-run specialty coffee producer in Boquete, Panama, combining generational heritage with modern, experimental processing techniques. Founded in 2016 by José Luis Chevas, the farm partners with a world-class barista to craft complex Geisha microlots. In the 2024 Best of Panama competition, Chevas submitted three standout lots and achieved 9th place in the Geisha Natural category, earning a spot among the most coveted auction lots globally.
This unique coffee is a combination of two of the Chevas Coffee Estate’s washed gesha lots. The first cherry is washed, then undergoes a slow dehydration in the Estate’s cold room followed by a carefully controlled drying in their dark room. The second cherry is a traditional washed process gesha. Together, these two processing methods create a uniquely balanced example of the terroir from Panama.
WHY WE SELECTED THIS COFFEE
We’re excited to once again work with José Luis Chevas of Chevas Estate for this release. This release is designed as an accessible introduction to Panamanian washed Gesha, offering the elegance and character the variety is known for at a more approachable price.
This coffee is a blend of two washed Gesha lots, each with its own distinct personality. When roasted together, they balance as a layered and harmonious cup that highlights the beauty of Chevas Estate’s growing and processing.
The first impression is a burst of delicate white florals, reminiscent of magnolia, a hallmark that makes great Panamanian Gesha such a pleasure to drink. From there, the cup moves into a graceful citrus pairing of sweet mandarin orange and fresh lemon, giving the profile brightness and clarity.
As the coffee cools, a subtle but persistent stone fruit note begins to appear, adding depth and complexity to the acidity and rounding out the overall experience.
We love finding ways to showcase the excellent work happening at Chevas Estate, and this coffee is a great example of that partnership. It also marks a special moment in our Fruit Forward lineup, offering many people their first experience with Panamanian Gesha.
