ABOUT THIS COFFEE AND PRODUCER

Approximately 70% of the Elida Estate farm lies within the Volcán Barú National Park — a protected ecological reserve. The Barú Volcano reaches 3,475 m and spans 14,000 hectares with seven distinct climate zones. Elida Estate grows coffee at 1,670 to 2,200 masl, under conditions truly unique in the world. Unique growing conditions include ultra-high elevation, rich volcanic soils, a unique microclimate, low temperatures, beneficial microorganisms, unique coffee yeasts and fungi, fog and mist during the dry season, and surrounding virgin native cloud forest. Night temperatures sometimes drop below 10 °C / 50 °F in the highest areas which extends the production period and slows fruit ripening, crucial for exceptional bean development.

Plano is one of the distinguished micro-terroirs of Elida Estate, situated between 1,685–1,700 masl. This natural lot was processed using the Anaerobic Slow Dry (ASD) method: whole burgundy-ripe cherry was sealed in an anaerobic tank for three Reactor Fermentation Days (RF3D), then dried slowly and under careful control. The extended, oxygen-restricted ferment builds remarkable depth, intensity and a complex, layered fruit character, while the slow dry locks in clarity and sweetness.

WHY WE SELECTED THIS COFFEE

Elida Estate and Wilford Lamastus need little introduction. For more than a century, the Lamastus family has been at the forefront of Panamanian coffee, and we're honored to share another exceptional Gesha from the estate, this time showcasing one of their newest processing approaches.

This lot is an Anaerobic Slow Dry, fermented in a sealed reactor for three days before drying. The precision behind the fermentation is immediately apparent. Rather than redefining the coffee, the process elevates its natural qualities, adding intensity and complexity while remaining remarkably clean and transparent.

The cup opens with a vibrant interplay of lychee and strawberry, creating a lively, layered acidity that gradually settles into sweet yellow peach through the middle of the cup. Delicate hibiscus florals weave in and out throughout the experience, adding lift without ever dominating the profile.

It's a coffee that highlights what careful fermentation can achieve when paired with exceptional raw material. The result is expressive yet refined, preserving the elegance of the Gesha while gently amplifying the qualities that make it so memorable.
