ABOUT THIS COFFEE AND PRODUCER


Marie Jackie Mercer Vallarino has been growing and exporting coffee from Los Cantares estate for the past two decades. Her farm has won her multiple awards including a first place 2012 Best Of Panama win and a second place win in 2014.

Los Cantares Estate has 125 acres cultivated with coffee, meticulously divided into plots with distinct varieties planted based on landscape and micro-climates, which influence the maturation and ultimate quality of a coffee seed in different ways.  Los Cantares Estate also has 50 acres of naturally preserved forest, which is a reflection of the mindful and environmentally balanced approach to farm management.

This lot is picked with a keen attention to cherry maturation.  The ripe cherries are floated to remove less dense and damaged seeds, and then depulped, fermented, washed and placed on raised beds and turned regularly over a period of 8 to 12 days.

WHY WE SELECTED THIS COFFEE

This is our first time working with Finca Los Cantares and Marie Vallarino, featuring their Washed Caturra Catuai.

We don’t often source coffees from Panama for a cocoa-forward profile, but this one felt too compelling not to share. If you’re curious how terroir and growing conditions can translate into deeper, chocolate-driven flavors, this is a great example.

The medium roast brings out a rich, decadent chocolate character that reminds us of lava cake. There’s also a layered, sugary nuttiness—something like pecan pie—alongside a jammy raisin sweetness that adds a distinct, fruit-driven sugariness.

The finish is especially notable here: pronounced and long-lasting, with more persistence than we typically see in coffees at this roast level.
