A bright and smooth, candy-like Gesha from Franky Stiven Hoyos and Finca El Encanto in Pitalito, Huila, this Advanced Washed lot is delicate but very expressive. In the cup we find juicy mango sweetness, strawberry candy, and a soft vanilla finish, with the rose tea character showing up as a gentle floral layer.
Franky is a third-generation coffee producer at El Encanto, where he has focused much of his work on fermentation, processing, and building profiles. This particular lot was inoculated with yeast followed by a thermal shock step before being dried in parabolic dryers.
Funk: 1.5/5 - "out there" in terms of interesting coffee profiles, but not as funky as you'd expect from a coffee with "Mango Juice" as a note. But this is one heck of an interesting coffee, and we're excited to share it with you!
