ABOUT THIS COFFEE AND PRODUCER
This coffee comes from both Hacienda El Obraje and Finca El Paraiso, two well-known Colombian farms, who have come together to make this special decaf lot. Hacienda El Obraje, owned by Pablo Andres Guerrero, is part nature preserve with a wide variety of natural flora and fauna. 39 hectares of coffee are cultivated there and includes 9 different varietals. Finca El Paraiso is owned by Jose Ignacio Gomez and is a relatively new farm, having only started operations in the last decade of the twentieth century. Jose was one of the first to grow coffee in the region of Buesaco and is dedicated to the exploration of growing different varieties.
The Hacienda El Obraje portion of this lot was first anaerobically fermented for 36 hours in cherry. Then it was mechanically pulped and anaerobically dry fermented for 12 hours. Finally, the coffee was washed and dried for 2 days under sunlight and 3 days in a mechanical drier.
The Finca El Paraiso portion was first anaerobically fermented for 12 hours, then de-pulped. Next, it was fermented for 24 hours in dry mucilage. Lastly, the coffee was washed and dried for 22 days.
WHY WE SELECTED THIS COFFEE
We're excited to introduce our next decaf light roast, taking our decaf lineup in a new direction. This is our first washed light roast decaf and our first decaf Gesha, bringing together two things we've been eager to explore.
This lot comes from two farms we've come to respect and enjoy working with, Hacienda El Obraje and Finca El Paraiso. Despite the decaffeination process, the coffee retains a remarkable amount of its fruit-forward character, a testament to the quality of the green coffee and the care behind its production.
The first sip brings a deep, concentrated apricot sweetness, followed by a lingering orange note that adds brightness to the cup. The fruit is rich and well defined, with enough clarity to let the character of the Gesha come through.
As the coffee cools, a gentle sweetness reminiscent of dates begins to emerge, rounding out the fruit with a softer, more mellow finish. It's exciting to see this much character carry through into a washed light roast decaf, and we're looking forward to exploring more coffees in this direction.
