ABOUT THIS COFFEE AND PRODUCER
El Pilon is part of a family legacy spanning 50 years. Led by producer Ilde Burbano, El Pilon uses traditional knowledge while progressively integrating new varieties and processes. Ilde continues to innovate and increase the quality of El Pilon’s coffee with the help of export partners.
For this pink bourbon, the cherries are first de-pulped and then anaerobically fermented for 24 hours. The cherries are then washed twice and dried for 10-25 days.
WHY WE SELECTED THIS COFFEE
We’re very thrilled to share our first coffee from El Pilón in Colombia.
This is a truly unique take on Pink Bourbon, one of the most dynamic and prized tasting varietals coming out of Colombia. It is unusual to find such clean and bright grape and berry flavors alongside bergamot from clean anaerobic washed coffees that we were especially excited to source and present to you.
Right away, there’s a beautifully juicy green grape note, tangy and well defined. As it cools, that brightness deepens into a more complex blackberry character that sometimes shifts into cherry. All the while, there’s a lingering fragrance of fresh bergamot that carries through as the acidity softens.
It’s a lovely example of Pink Bourbon that stands apart from others, and one we’re especially excited about.
