A sweet and botanical washed Java from Juliana Guevara and Wbeimar Lasso of Finca La Terraza in Huila, Colombia. In the cup we find raspberry, lemon balm, and violet leaves. Bright, floral, and a little herbal.
La Terraza is a small family farm run by Juliana and Wbeimar, who are also behind Terra Coffee, a producer group focused on high-quality microlots from Huila and Nariño. This Java comes from one of the higher plots on the farm, where cooler conditions slow cherry maturation, fermentation, and drying.
The processing here is straightforward: the coffee is hand-picked, depulped, fermented for 36–48 hours in concrete tanks, then dried in a parabolic dryer for 14–20 days depending on the weather.
