About the coffee:
Diego Bermudez produces some of the most rare, fine coffees we've ever found. Rather than using traditional processing equipment, Diego instead uses bio reactors to ferment the coffee, while measuring time, temperature, pH, brix, and microbial load.
The meticulous work that goes into the processing and fermentation results in clean, dynamic flavors that's challenging everything we know about coffee.
In the case of Letty, the result is one of the most dynamic coffees we've ever tasted. The peach blossom notes sing, while yellow fruits and oolong tea present themselves as the cup cools. While hot, the peach and yellow fruit acidity are mouth watering. As the cup cools, it becomes more delicate. The florals become more pronounced, and the creamy mouthfeel gives way to tea-like features.
