ABOUT THIS COFFEE AND PRODUCER
We are very excited to release this limited lot from Pepe Jijon and the team at Finca Soledad. This Sidra is a unique take on Pepe Jijon’s trademark “wave” philosophy and process. It uses gentle fermentation and controlled temperatures to introduce the least strain on the coffee cherries while still producing high clarity, vibrant coffee.
For the Wave Hybrid process, the coffee cherries are first stored for 4 days in tanks at Finca Soledad’s cold room. Then they are dried for 12 days as a natural coffee. After this, the cherries are rehydrated with a small amount of water and depulped. Finally, the cherries are dried for 3 days in the cold room as a honey processed coffee.
WHY WE SELECTED THIS COFFEE
We’re delighted to share a truly special lot from our good friend Pepe Jijón at Finca Soledad. It’s an honor to be trusted with their new Sidra Wave Hybrid processing style—an approach that feels both inventive and deeply considered.
This hybrid method combines elements of natural and honey processing in a way we’ve personally never encountered before. The result isn’t simply a midpoint between the two styles; it feels layered, almost like adding the best parts of each. We’ve long been fans of the Wave Natural Sidras of the past—juicy, punchy, and loud, but this complex process is a unique and different presentation of their wonderful sidra trees.
In the cup, it opens with a clean, sparkling citrus quality, airy Sprite-like tanginess with high sweetness. As it settles, deeper red fruit tones emerge: juicy red mango, pomegranate, and hawthorn, reminiscent of the expressive naturals we’ve loved before. Throughout, there’s balance and complexity especially with rose like florals in the finish.
It’s a fun, complex, and genuinely unique coffee that showcases Pepe’s mastery of evolving fermentation—turning up the volume on their terroir without losing clarity. We hope you’ll spend some time with it and enjoy the experience as much as we have.
