ABOUT THIS COFFEE AND PRODUCER
This Sidra from Pepe Jijon is remarkably complex and a testament to Finca Soledad’s continuously improving processing methods. The coffee uses Pepe Jijon’s trademark “wave” philosophy of using low intervention methods to showcase the innate qualities of the coffee itself.
For this Sidra, the cherries are first fermented for 72 hours submerged in grainpro bags. Then, they are depulped and undergo a cold dehydration for 28 days.
WHY WE SELECTED THIS COFFEE
We’re excited to share one of our favorite coffees from Pepe to date, featuring a process we keep coming back to from Finca Soledad. The wave natural this time with a cold ferment step is truly a stand out among the work from Pepe and his team.
The cup opens with a bright, sparkling peach soda character. From there, it moves into the familiar wave natural texture, showing up as a creamy strawberry yogurt note. As it develops, tropical pineapple comes through alongside hibiscus florals that feel light and expressive.
This is one of our favorite Pepes so far, loud and expressive but still refined with a ton of complexity.
