July is for Naturals
A few months ago we set ourselves on a mission to source beautiful dry-processed coffees, and we knew a Sudán Rumé had to be part of the line-up for their intricate fruit and florals.
The challenge: finding a coffee that is highly expressive and complex -- a showstopper, while still elegant, clean and more traditionally processed.
While all the options we tried were fantastic, this Competition series from Café Granja La Esperanza knocked it out of the park, and we decided we HAD to share it with you all.
We taste ripe apricot, fig and grapefruit both individually and in harmony with each other... cohesive, 'music' for your tastebuds. Florals; while subtle, adorn and turn song into masterpiece.
The Process
Coffee cherries are selected at the peak of ripeness, followed by a floating process to carefully remove any lower-quality beans. The cherries are first fermented in open tanks for 48 hours. Then, they undergo a second stage, where they are carefully sealed in closed tanks for an additional 72 hours to deepen their complex flavors.
The cherries are gently dried in mechanical driers for 8 to 12 days, set at an ideal temperature of 38°C to preserve their rich character. After drying, the beans rest in climate-controlled storage, kept between 18°C and 19°C, where they mature to perfection.
