ABOUT THIS COFFEE AND PRODUCER

Founded in 2020 in the heart of Mangshi, Yunnan, China. Project One Light is a specialty coffee processing project led by Olina Cai, a local with deep roots in the coffee and tea industry. Her team includes Q-graders and processing experts who prioritize ethics, environmental care, and quality at every step of the process.

For this lot, cherries were first selected at peak ripeness and double floated to ensure consistency and stable sugar content. Then, the cherries undergo enzymatic hydrolysis to break down their pectin layer and facilitate fermentation. After this, a specialized yeast is used to inoculate the cherries and they are then transferred into airtight containers to ferment for 10 to 15 days. The cherries are then dried for 15 to 22 days.

WHY WE SELECTED THIS COFFEE

We have been enjoying the process of finding and sharing the interesting directions Yunnan grown coffee is taking this year. This lot is another example of the care and experimentation happening there.

Produced by Olina Cai at Project One Light, this coffee highlights their work with yeast inoculated fermentations and evolving fermentation protocols. It feels both intentional and expressive.

The name Peach Oolong suits it well. The cup opens with the earthy pu er or red tea depth we often associate with Catimors from Yunnan. Almost immediately, that base note gives way to a distinct peach candy sweetness, reminiscent of peach syrup in boba tea. Jasmine florals and a soft hint of milkiness round it out, bringing to mind a layered, sweetened tea drink much like an actual boba milk tea.

It is a layered and playful processing showcase that stays interesting from start to finish.
