This washed Colombian Java from Yesid Pajoy in La Plata, Huila, represents the first ever microlot selection from this producer. Yesid is a founding member of Mártir Coffee and a relative of the group’s leader, Didier Javier Pajoy. His family farm sits nearly 2000 masl in the Cordillera Central. In the cup, we find sweet celery juice which gives us pleasant herbal and sweet-green flavors while avoiding bitterness, with white grape sweetness, and a smooth tea-like mouthfeel.
