ABOUT THIS COFFEE AND PRODUCER
Zarza Coffee is a third-generation family project located in the mountains of Bruselas, Huila. Guided by family heritage and a commitment to quality, the Gasca family has built a coffee project grounded in traceability, sustainability, and respect for traditional practices.
The name Zarza, connected to the family surname Gasca, represents unity and continuity across generations. Through careful agronomic management and precise post-harvest practices, Zarza Coffee seeks to preserve the essence of Colombian coffee while adapting it to contemporary specialty standards.
This classic washed pink bourbon is first given a traditional wet fermentation to break down the mucilage. Then, it is washed with clean water to remove the residual mucilage before being placed on raised beds to dry.
WHY WE SELECTED THIS COFFEE
We're excited to share another side of the Zarza Coffee Project. While we've come to know Zarza for its vibrant, fruit-forward coffees that shine as lighter roasts, this release explores a more developed profile with deeper sweetness and a jammy character that leans closer to a medium roast.
This Pink Bourbon takes on an entirely different expression. The cup opens with a sweetness that reminds us of a Fig Newton, bringing together dark fruit and pastry-like richness in a way that feels both familiar and distinctive.
As the coffee develops, gentle notes of roasted chestnut add warmth before giving way to a finish reminiscent of a Chips Ahoy chocolate chip cookie. The result is a softer, more comforting interpretation of the project.
